A New York State Fair Prize-winning Recipe 2-1/2 cups diced apples (Empire and Cortland) 1/4 cup lemon juice 1/3 cup pectin 2-1/2 cups granulated sugar 1/2 cup NYS dark maple syrup Wash and dry 8-10 pint canning jars; place on dry towel, set aside. In a large stockpot, add apples, lemon juice, and pectin. Heat on high, stirring constantly to prevent sticking and burning. Bring to a full rolling boil for 1 minute. Ingredients1 piece salmon1/2 cup pure New York State maple syrup1/3 cup canola oilRind of ½ lemonSalt and pepper DirectionsMake a marinade from the ingredients above and let sit for at least 1 hour. Brush fish with the marinade. Grill or bake until fish is cooked to your liking. Remove from heat and drizzle with more pure New York State maple syrup and lemon to taste. Maple Ham Glaze
6-8 pound Ham ¾ cup New York State Pure Maple Syrup 1 teaspoon Dry Mustard and/or 1 tablespoon Red Wine Vinegar Mix the NYS Pure Maple Syrup with 1 tsp. dry mustard and/or 1 tbsp. red wine vinegar to add a bit of flavor contrast. Maple Glazed Carrots
By Helen Thomas Maxon Estate Farms, Attica, NY INGREDIENTS 1 lb. medium carrots (about 6 to 8) 3 tbsp. pure NYS maple syrup 3 tbsp. butter 3 tbsp. orange juice Optional: 1/2 tsp cinnamon or nutmeg or ginger DIRECTIONS Wash and slice carrots, then steam until tender (you can microwave in covered dish to cook). Melt butter in a skillet. Add pure NYS maple syrup, orange juice and seasoning to melted butter. Simmer carrots in mixture until glazed. Try with sweet potatoes, too!
